yeah finally the cold kitchen training had come to an end le ~

1 week of preparation , taking care of the colour , the taste , the temperature of the food..

Cold kitchen

23 may 2006 ( day 2 )

ingredients for fish terrine

laying of slice carrot as the surface of the terrine

piping of fish paste on to the carrot

crab stick ~~

the last layer , after all the fish paste is in , we send the terrine for steaming

30 mins later~~~

cooked terrine we neeed to chilled them before applying gelatine onto them .

25 may ( day 3 )

we had night training in school yesterday , after we finish our asian cooking we head to pastry and baking kitchen to prepare for the coating of gelatine to our meat item and vegetable. we had lots of fun as we are the onli group of ppl left in our school premise , galvin bought beer to drink and we were all running around everywhere ~ no photos to show as i forgot to bring my camera .haha

a guest chef from France came to shatec and gave us a demo today

the chef started off with introduction of himself and his country and i can hardly understand his english .

currently i am a full time student studying in SHATEC which is located at bukit batok .
we are not able to purchase concession ticket because we are from private school ! but why ?
do you guy know how much do they charge for a trip ?

Fares from Ang Mo Kio to Bukit Batok

The fare (in Singapore Dollars) for the following tickets are:

Standard Ticket:$1.90
Adult ez-Link Ticket: $1.67

let's do a simple calculation:
a trip from my house ( amk ) to the nearest station ( yck / amk ) is $0.67 ,and a trip frm the station to my school ( bukit batok ) is freaking $1.67
total of 1 trip will be $2.34
and a trip back home be another $2.34
$2.34 + $2.34 = $ 4.68
$4.68 x 30 = $140.40 !

full time student means we are not working and not earning a single cents , how am i suppose to find $140 a mth ! why we are not given the benefit of using concession ?
how am i gonna survive 2 years with this type of train / bus fares?

Cold Kitchen

Yoz yOz finally weekends has come , i stop working le so i will have my weekends going out and doing stuff :P

next week will be a busy week , we will be learning thing about cold kitchen , we are divded into groups of three.

today we do some of the preparation for it , we did chicken galantine and apic ( if i am not wrong abt the name , correct me if i'm wrong lol )

the preparation for the chicken galantine started off with deboning of the chicken ,we are suppose to remove the whole bone out of the chicken without tearing the chicken SKIN !

although i am not incharge of deboning the chicken but let me tell you guys ,

it's not easy !

This is my test menu today , the choice of salmon or chicken will be base on drawing lots...
i wish to get salmon today but i get the best part of a woman but the worst part of a chicken ... THE BREAST !!!
i need to debone the breast and tender it before i can do anything to them~

after brain stoming yesterday with my sister . i plan to do pan fried chicken roulade with stuffing ( bacon )

everything looks ok but my chicken is badly over cook -_-

tml will be the voting day for the general election 2006 , this is the 1st time i will be able to vote for ang mo kio GRC
